Pumpkin Muffin

On Saturday we had to take a plate for the fundraiser which I left on the bench at home.  Oopsie!  The idea was to take a Paleo plate so I went searching the net for recipes for muffins or something like that.  Now, I always find it amusing that you can get recipes for cakes and muffins and the like.  I'm not sure if cavemen made their own coconut flour but, oh well, it's not like I could take a big slab of meat.

I found a nice recipe for pumpkin muffins but made some changes because I didn't really trust the recipe.  Also, the original recipe called for organic honey which I didn't have so in true caveman style I hunted and gathered in my cupboard and found maple syrup.  Most of the quantities in my recipe are guesstimates as I tasted as I went along and added bits here and there.  Anyway, here's my version:

1/2 cup coconut flour
1/8 tsp salt
1/2 tsp baking soda
1 tsp ground cinnamon
1 tsp ground ginger
3 large eggs
1/2 cup cooked, mashed pumpkin
4 tbsp maple syrup
2 tbsp butter
vanilla

Mix the flour, salt, baking soda and spices
Add in eggs, pumpkin, honey, butter and vanilla
Transfer batter into paper lined muffin tray
Bake at 180degC for 25 min

It was given the 'hubby tick of approval' and that is a pretty big wrap.

Yeah, paleo recipes crack me up too.

And all those "Paleo" eaters who consume slabs of bacon daily....
